Italian Cheese Cookies

Ingredients

  • 2 cups sugar $
  • 1 cup butter, softened $
  • 1 teaspoon vanilla extract $
  • 1 teaspoon salt
  • 1 15-oz. container ricotta cheese
  • 4 cups all-purpose flour $
  • 1 teaspoon baking soda
  • Sweet Vanilla Icing:
  • 2/3 cup plus 1 T. sweetened condensed milk $
  • 1/2 cup butter, softened $
  • 1 teaspoon vanilla extract $
  • 2 cups powdered sugar $
  • Optional: red food coloring

Directions to make Italian Cheese Cookies

  1. Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt and ricotta cheese. Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 13 minutes. Cool on wire racks. To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cookies.
